Zucchini!!

Do you like it? I know a few of my siblings don't, but we love it around here. In the garden-planting season, we can't wait for our plant to produce--so many yummy ways to eat it! Besides Beef Benihana here are two other recipes everyone in my family enjoys.
Fried Zucchini: I know that isn't the healthiest way, but if I only make it 2-4 times a year, I figure it is okay. To make it, crush up a cup or so of cracker crumbs (Ritz or something of the like) add about a half a cup of flour then throw in a bunch of spices to taste. We love season salt, garlic salt, pepper and a dash of cayenne. For me, the key to success is to test the breading on my finger to make sure it has enough kick. We like it quite spicy because zucchini needs a bit of a kick. I peel the zucchini, slice it fairly thick (about 1/4"), dip it in egg, then the breading and fry in oil. Yum! (and in finding a picture for this, I found a lot of people put Parmesan cheese in the breading mixture. YUM! Gonna have to try that!)The other way to eat it that everyone in my family loves it is in zucchini bread. This is such a great recipe and I can't make it fast enough. (and surprise, this is actually my own picture!)

3 cups flour
1 tsp salt
1tsp baking soda
1 tsp baking powder
3 tsp cinnamon

Stir together in bowl and set aside. In another bowl, mix:
3 eggs
1 cup oil
2 1/4 cup sugar
3 tsp vanilla

Add sifted ingredients and beat well. Stir in 2 cups of grated zucchini (and 1 cup of nuts if desired) and pour into pans. Mix topping and sprinkle on top. Bake @ 325 for 40-60 minutes.

Topping:
3 TBSP flour
1/2 cup quick oats
1/2 cup brown sugar
1/4 tsp salt
1/2 tsp cinnamon
3 TBSP butter
Stir together until crumbly.

YES, lots, but I can't get it to grow in my yard without getting eaten off at the head of the plant! GRR...

But I love to blend it up and add it to pancakes (add a tsp of cinnamon to the batter), or spaghetti (great way to hide veggies), and of course banana bread. But my husband's all-time favorite way to eat it is:

Zucchini Casserole
Slice and par boil one large zucchini, drain and lay it in a casserole dish.

Make a very basic tomato sauce with cooked ground beef & onion, 2 cans diced or crushed tomatoes, salt and pepper to taste. (No flour or other spices!) Poor over zucchini.

Sprinkle grated cheese over this, & be generous. Sprinkle bread crumbs over the cheese. (I usually make them with a piece of toast.)

Broil until cheese is melted and starting to brown. Mmm, mmm good!

You already know I don't like zucchini. But I do like it in zucchini bread. I haven't had it with a topping before so I shall try it. I like the bread best with chocolate chips in it. Yum! I don't plant zucchini so I will have to see if someone tries to give me some.

Someone gave us a zucchini casserole last year and the lady who brought it said we would never know it was in there. But we knew. We couldn't eat it! But I imagine that someone who liked squash would enjoy it. It had stove top stuffing on it.

Katie, I can't believe all 8 people at your house don't like zucchini. I think they've been conditioned! While I like some casseroles with zucchini, I haven't found one that is *outstanding*. Send the kids over and I bet I could get a few of them saying zucchini is pretty good. (Caleb is prime example.)

Yes, Danna, come over and we'll eat fried zucchini to your heart's content. PS. . .there are a lot of homes for sale in our ward and I'd love to be neighbors!!

The only way to eat zucchini is disguised. ie...chocolate brownies, muffins or bread. I'd take it that way anyday!

Last night I made the fried zucchini with Parmesan cheese. . . know that I LOVE Parmesan cheese. And I thought it was absolutely nasty. Caleb, on the other hand, love, love, loved it. He begged me to make it that way again. Everyone else thought it was okay, but liked the other way better.

I agree that there may be some conditioning. However I did not tell anyone that there was squash in the casserole or even that they may not like it. Dennis did eat it because he is that way. But he likes squash so I guess I really can't say that all eight of us hate it. For me it is mainly the texture that grosses me out. Plus it is SO bland in a very yucky way. That is my humble opinion.

Darcee. I've been meaning to say hello and thank you for your comment on my blog awhile back. I loved reading your 100 post. Reminders are so great. I love zucchini as well. Beside loving the two ways you suggested I love it with bbq chicken kabobs. I just add it to the other veggies and broil it inside. Thanks again!
